Whole Grain Pumpkin Muffins
Ingredients:
1 cup whole wheat flour
1 cup quick-cooking oatmeal
1/2 cup packed brown sugar
1/3 cup chopped walnuts
2 teaspoons baking powder
1 egg
1/2 cup nonfat or 1% milk
1 cup pumpkin "flesh"
1/4 cup vegetable oil
non-stick spray
1. Preheat oven to 400 degrees F, and lightly spray muffin tin with nonstick spray.
2. Mix flour, oatmeal, sugar, walnuts, and baking powder in a large mixing bowl.
3. In another bowl, beat egg and mix in pumpkin, milk, and oil.
4. Stir the liguid mixture into the dry ingredients and mix lightly.
5. Bake 15-18 minutes or until tops are browned.
Serve warm, makes 12 muffins.
Baked Cheese Wedges
Ingredients:
10 oz extra sharp cheddar cheese (large brick)
1/2 cup seasoned dry breadcrumbs
1/2 teaspoon crushed red pepper
1 egg, beaten
40 crackers
1. Preheat oven to 350 degrees F.
2. Cut cheese into slices about 1/4 inch thick, then cut slices into 2 triangles.
3. Mix breadcrumbs and pepper.
4. Dip cheese into egg, then breadcrumb mixture.
5. Put the cheese onto the crackers, and the crackers onto a greased cookie sheet.
6. Bake at 350 degrees F, for 5-7 minutes, or until cheese is melted.
Makes 40.
Spooky Spider Cookies
Ingredients:
Black string licorice
20 orange creme filled chocolate sandwich cookies
1 teaspoon ready to spread chocolate frosting
40 mini candy-coated chocolates
1. For each cookie, cut 8 1/2 inch pieces of licorice for legs, and put 4 into the filling on each side.
2. With frosting, attach 2 candies on top of each cookie for eyes.
Makes 20.
Amazing Apple Crisp
1. Core, peel, and slice enough apples to get 4 to 5 cups of slices.
2. Preheat oven to 350 degrees F.
3. Spread the 4-5 cups peeled, sliced apples into a square pan.
4. Sprinkle the apples with a mix of:
- 1/4 cup water
- 1 tsp. cinnamon
- 1/2 tsp salt
- 1/2 cup sugar
- 1/2 cup white flour
- 1/2 cup whole wheat flour
- 2 Tb. wheat germ
- 1/3 cup butter 6. Spread mixture over apple slices.
7. Bake uncovered for 40 minutes, and serve warm.
